If you’re a sweet potato fan then these are for you!


3 lb. Bag of Sweet Potatoes

21 oz. Can of Apple Pie Filling

1/3 Cup of Firmly Packed Brown Sugar

3 Tablespoons of Butter

1/3 Cup of Walnuts or Pecans

1/2 Cup of Caramel Sauce (you can find it in the store by the ice cream toppings)

1/2 Teaspoon of Cinnamon


Put all 3 lbs. of potatoes with skin on in microwave and cook between 8 and 10 minutes. You want the potatoes to be a little more than half way cooked, you still want them to be firm enough to peel so they don’t squish in your hand. Let them cool until you can pick them up and peel without burning your hands.

Cut potatoes in 3 inch pieces, place potatoes in a 2 quart covered casserole dish, add pie filling, brown sugar, nuts, cinnamon, and caramel sauce, mix carefully so as not to mash or break potatoes. Some will break, that’s ok, just be as gentle as you can. Top potatoes with dabs of butter, 3 tablespoons.

Bake in a 350 degree oven for 40 to 45 minutes or until sides of casserole dish are bubbling and potatoes are fork tender. Let potatoes sit for 10 to 15 minutes before serving.
