These are good right out of the oven or at room temperature, and they are a very easy hors d’oeuvre to make for a summertime party.

3/4 Cup Flour

3/4 Teaspoon Baking Powder

1 Tablespoon Italian Seasoning

Pinch of Red Pepper Flakes

1/2 Finely Chopped Green, Red or Yellow Pepper

3/4 Cup of Milk

1 Egg (lightly beaten)

1/2 Cup Shredded Mozzarella

1/2 Cup Shredded Cheddar

1/4 Cup Grated Romano Cheese

1 Cup Chopped Hard Salami (You Can Substitute Pepperoni)

Mix flour, baking powder, italian seasoning, and red pepper flakes.

Add remaining ingredients mix well and let sit for 10 minutes.

Grease or spray a mini muffin pan and fill tins 3/4 full with batter.

Bake 16 – 20 minutes at 375 degrees, or until lightly golden on top.
